How to prepare sauce which sticks to chicken wings? What you should know?

What are the reasons sauce does not stick to chicken wings?
Well! That happens due to 2 main reasons which include:
- The sauce might get split
- The sauce is extremely thin

How to re-emulsify a split sauce?
The term Emulsify means the 2 ingredients combine but that does not happen easily. Buffalo sauce is made of 2 things which are:
- Butter (fat)
- Hot Sauce (Vinegar)
Butter is what helps in combining the ingredients. Although, both of them do not combine. You need to give it a chance that butter is separated from the hot sauce so that it gets stuck to your wings. Here’s what you should do:
||Add a bonding agent to combine the ingredients|
||Mustard is added in powdered or prepared form|
Whisk one egg yolk and add 1 tablespoon of water in it. It’s addition will also make the sauce thick.
*Note: When you want to add the emulsifier you need to use the hand blender. If you do not have that, then use the whisker.
How can I make a sauce thick?
- Reduce the sauce
First of all, you need to simmer the sauce till the time consistency is right. When you heat the sauce, the excess water will evaporate and it will get thick which will coat the chicken. It is going to take 10 minutes. As the sauce becomes cool, it will become thick on its own.
- Include a thickener
You should add a thickener to correct the sauce’s consistency. For that, you can use these options:
Combine water and cornstarch (1:1). Add this to the sauce and then heat it.
Melt butter and add flour. Let it cook for 5 minutes and then add in the sauce.
Add BBQ Sauce into the sauce and this will give an added level of sweetness to it.
Sriracha is thicker as compared to hot sauce and it will make it thick. But, make sure you do not go overboard with the sauce amount.
How to coat the chicken wings?
A simple quick fix to coat the chicken, here’s what you need to do:
- Make sure that you coat the wings more than once.
- When you coat the wings more, the sauce will stick to it perfectly.
- Coat it properly, but you should wait for 1 minute before you add in more sauce. This way the sauce will settle into the wings easily.
How to make fried chicken wings crispy?
- Cook the wings in oil at 350 degrees for 10 minutes.
- Remove the wings and shake off the excess oil.
- Let them get cool for 5 to 10 minutes.
- Reheat the oil and fry the wings once more for 10 minutes at 350 degrees.
- After 10 minutes, take out the wings and let them cool for 5 minutes.
- Toss the wings in a sauce of your choice.
